Koulouri

Koulouri is a light brown bread covered with sesame seeds and has a slightly sweet taste without being buttery or salty. Soft inside, quite crunchy on the outside. This is achieved by soaking it into warm water before baking.
It is a casual and handy snack. A quick breakfast that people grab on their way to work and have it with coffee or juice. It is sold in bakeries and on the street, all day long, even very early in the morning in front of nightclubs.
Filming in Germany
October 17th, 2007During our recent trip to Cologne and Dusseldorf (Germany) we filmed an episode for mamakouzina TV show. Food there was fabulous and the recipes we brought back to our tapes were amazing. Many thanks to all people cooked for us and helped us on the trip!

Welcome Feta - Cheesenet Roadshow

That was a live cooking show on a formal dinner organised by Cheesenet and Kerasma (HEPO). The event took place at Hyatt Hotel in Cologne Germany on 16th October 2007. Stephan Marquard (German Celebrity Chef) and I demonstarted recipes with Feta Cheese. The evening was dedicated to Feta and the official application of EU’s instruction that declares “feta” as an exclusive Greek P.D.O. product.
Why FT?
October 11th, 2007Many people ask what FT stands for. Here is the story:
My given Greek first name is Eftychis*. This is pronounced in greek as “Ef - Tee - His” which sounds like F - T - HIS. for short: FT, The nickname has been given to me for the first time in 1996, when I was in York (UK) for a 3 week English language summer program. When I got there, one of the leaders/teachers asked for my name so that she would write it on a badge and put it on me. I said “Eftychis” and she replied “This is hard to remember and pronounce… We will call you “Efty”, and wrote “FT” on my badge… Since then and all of the years I lived in UK as a student I introduced myself as FT.
* “Eftychis” in greek means happy/joyfull or lucky
